Mother’s Day Paleo Blueberry Muffins

Celebrate Mother’s Day by fixing up a great Paleo breakfast in bed.

Mary, our Innerfire Chef, shows us how to make Paleo Blueberry Muffins for Mom.

Paleo Blueberry Muffins
Serves 18 (mini muffins)
11/2 c almond flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 c blueberries
¼ c honey
¼ c oil
4 large eggs
1) Preheat oven to 325.
2) Combine dry ingredients in a large bowl (flour through salt). Combine wet ingredients in a small bowl; stir with a whisk. Add wet ingredients to dry ingredients, stirring until just combined.
3) Divide evenly between 18 muffin cups (or 10 large muffin cups). Bake at 325 for 12-20 minutes or until cooked through. Serve immediately.
